Friday moring and murphys law....

Anything that can go wrong, will go wrong....and so my Friday morning begins. The system I use to work from home crashed and I was told I had an hour to get to work. Luckily I caught Mikey seconds before he was about to leave for work, in a robe and slippers I dashed out the door to drop him off. We are currently a one car house hold, his car has been in the shop getting much needed repairs. I rush home and throw on what ever I can find clean my self up jump in the car and it wont start, finally I get it to start and the check engine light turns on. The last time this happened we made it a couple of blocks before the car shut down, having no cell phone I decided to call it a day and call in the last thing I need is to be stranded with no way to call for help. So here I am another day off, what to do what to do.. My apartment is spot less, I was a cleaning machine on my last day off did all the laundry and I even sent all my duvets and shams to get pressed, so I have nothing to iron. And honestly I can't remember the last time I used the iron. Have a dry cleaner in the family is such a great thing. Well I guess I can finally start some of those projects I have been putting off right? Right....Ummm so where do I start? Well I started with breakfast, a spinach and egg white baked omelet a recipe I found a few months ago at  Eat Yourself Skinny
She post really easy and delicious recipes, all though she hasn't blogged in a few months.*sad face.
Her recipe calls for three egg whites, a handful of spinach, half a cup of onions, four or five grape tomatoes, salt and pepper to taste. Depending on what I have on hand sometimes omit the grape tomatoes and instead saute some red or green peppers finely sliced to add, or any other veggies I have at the moment. I also advise you spray your glass dish with olive oil before you add the veggies and eggs so it just pops out. It takes about 30 min total prep and cook time but again it is so worth it. Oh I also once in while omit the salt and add some crumbled fetta on top.... Fetta isn't that bad right? Oh well its totally yummy and who cares a little feta ain't ever hurt nobody...(shakes head and snaps fingers)
I also had a small smoothie today only because its the first day I have been able to enjoy a cold drink.My cough is almost gone so I have been avoiding cold food because it triggers my coughing fits. I threw in a handful of spinach, a banana, small orange, a bunch of raspberries, a dash of OJ and ice. Soooo good .... So now I am ready to change into some crafting clothes and begin taking apart that stool that I am redoing.. About time.!!!!!

    Spinach and Egg White Omelet
    Yield: 1 serving
    Ingredients
    • 3 egg whites
    • Handful of spinach (about 1/2 cup)
    • 1/2 cup onion
    • 4 or 5 grape tomatoes
    • Salt and pepper, to taste
    Instructions
    1. Preheat the oven to 400 degrees F. Spray a medium skillet with cooking spray and saute your chopped onion for 3 to 4 minutes, until translucent. Add your spinach and saute until just wilted.
    2. Place spinach-onion mixture in a small glass dish (or you can use a small skillet) and crack 3 egg whites over top. Season with a bit of salt and pepper, add sliced tomatoes and bake in oven for 17 minutes. Serve with fresh fruit and enjoy!
